I would say Spyro 1, mostly due to the dragon redesigns and the worlds.

Spyro 1's remakewise improved various things like adding Skill points, the power up, and the dragon redesigns.

spyro 2 At least the Idols don't look scary anymore

I think Spyro 1 benefited the most from the remake, but I was personally very impressed with Spyro 3. The improved controls for the extra characters, as well as the much more expressive cutscenes and super cute ending, make it the definitive version of the game in my opinion.
